Hey Y'all, I want to talk tacos. I know, I know, you are thinking that a green-eyed Irish girl like me can't know much about tacos. Well, let me tell you, I have connections.
My tacos start with mahi which I consider to be the best fish to use in tacos. It's meaty enough to not fall apart and it has just enough flavor to hold up in our marinade made from all the best south of the border flavors. I don't make it hot because I want you to taste all the flavor.
I top the taco with my Chipotle Crema, made from sour cream and a bit of chipotle, lime juice and salt.
Fresh Pico de Gallo is essential. Fresh tomatoes, onions, cilantro,lime juice and salt. That's it. We let the freshness be the star.
My taco is a perfectly seasoned mahi, rich Chipotle Crema and sparkling fresh Pico de Gallo, all packaged separately in the kit so that it retains its freshness and doesn't get soggy. The brand of corn tortillas were selected by the consensus of the mothers of my Spanish-speaking employees. In fact, throughout the creation of this kit, the tasting goal for each step was "That tastes like my mom's."
I do all the work in the kit except heating the tortillas and cooking the marinated mahi.

The King is Here! Wild salmon is underway! We are currently getting troll-caught King salmon from near the mouth of the Columbia River. Troll-caught fish are caught by small, slow moving boats in the offshore areas outside the mouths of the rivers that are the spawning destinations of the salmon. They are caught one at a time by rod and reel so they are carefully handled and iced quickly on the boat.
Rich and buttery, king salmon has the highest fat content and mildest flavor of all the wild salmons. There is a reason we call it the King. |

And Finally, I stopped participating in social media a long time ago. In my day, the word friend meant that we were nice to each other and we were available if you needed help. We had things in common and enjoyed each other's company. Not so much anymore.
Facebook has some redeeming qualities and I started missing the good parts. I like book recommendations and answers to gardening questions. I like funny comedians and most of all I like dog videos. ALL DOG VIDEOS.
So to see the parts I like, I created a Facebook identity for my dog, Abby. She very rarely engages, occasionally likes a post, but mostly we just view things. However, the incessant influence of Facebook seems to be taking over our lives. Things are changing for Abby. She's feeling artifically confident and accessible. She is becoming her own woman. |
