Hey Y'all,
Happy Labor Day Weekend! It's time for you to get some rest from your labors and enjoy your family, your dog, your grill, your neighborhood and the end of summer. I'm not sure if you know this or not, but Labor Day was created to encourage people to take it easy and eat more fish.

It's Labor Day weekend and everyone is thinking grill, grill, grill and salmon, salmon, salmon. So how about a blast of coho to finish out your summer?

Scallops - 8/29 - 9/4

If you are looking for a more sophisticated Labor Day meal, here's an idea. Sea scallops from New Bedford, Massachusetts, the world's leading port for scallops, is an easy and elegant meal. Like shrimp, scallops are described by the average number of pieces in a lb. The scallops we have today are a 10/20 ct. meaning there are 10 to 20 pieces in a lb. or an average of 15.

How to cook scallops?
Lucky for me, scallops are easy. I can do it by myself without any assistance from Mr. Fish so I am certain that you, the culinary genius that you are, will have no trouble at all.
Pat the scallops dry and season with salt and pepper.
Put 2 tablespoons of olive oil in the pan and heat on medium high heat until it shimmer.
Put the scallops in the pan in a single layer and don't squish them. They need room to create a perfect sear. If you have to do it in batches, it's okay because you will be heating them again in the sauce.
Cook for about 3 minutes until they get lightly crusty and then turn them. Once they are lightly crusty on the other side, check to see that they are opaque throughout. Remove them from pan.
Make a sauce by cooking some minced garlic (1-1/2 T) in 3 T of melted butter.
Add a 1/4 cup of white wine, 2 T of lemon juice and 1/4 cup of chopped parsley. Reduce it by half. Then put the scallops in to heat and you are done!
What's the best part of this recipe besides the scallops? Using the words lightly crusty as a description. It makes me think of so many things I love - like Mr. Fish.... and toast.

Pompano are small, silvery fish with blue, green, and yellow coloring, known for their mild, sweet flavor and high-fat content, making them a prized seafood. Found along warm, sandy shores of the Atlantic and Gulf Coasts, they feed on small crustaceans and mollusks.

Although there is just a touch of the classic white and yellow flowers that Viognier is famous for, the nose here actually has more mineral notes than anything. Pairing Suggestion
A light fish in a beurre blanc is a classic choice, but chicken piccata, or even a nice salty pork chop will do just as well! A slightly fuller white like this really invites pairing with protein.

Labor Day means the end of summer. Back in the day, summer vacation ended on the Tuesday after Labor Day. We'd get all dressed up in the long sleeved, corduroy outfits our mom had spent all summer paying off at the K-Mart layaway and head out to school in 90-degree weather.
This year the summer really does feel over and done with. The temps this week have been amazing so I thought I would spend my two days off (!) outside. The first day I climbed halfway up Stone Mountain with my granddaughter, Ellie. We explored every pile of sand that had accumulated between the rocks along the way.

The next day I still had the urge to be outside and to conquer Stone Mountain in its entirety. Hence, a furious scramble up the hill with my little dog. We reached the top in record time where she promptly turned around and cried until we dashed back down again. Whew. A good night's sleep was had by all that evening.

Two adventures in the same location: one requiring patience and one physical stamina. I call it serious character development.
