It's Labor Day weekend and everyone is thinking grill, grill, grill and salmon, salmon, salmon. So how about a blast of coho to finish out your summer?

Scallops - 8/29 - 9/4

$32.95/lb.

If you are looking for a more sophisticated Labor Day meal, here's an idea. Sea scallops from New Bedford, Massachusetts, the world's leading port for scallops, is an easy and elegant meal. Like shrimp, scallops are described by the average number of pieces in a lb. The scallops we have today are a 10/20 ct. meaning there are 10 to 20 pieces in a lb. or an average of 15.

How to cook scallops?

Lucky for me, scallops are easy. I can do it by myself without any assistance from Mr. Fish so I am certain that you, the culinary genius that you are, will have no trouble at all.

  1. Pat the scallops dry and season with salt and pepper.

  2. Put 2 tablespoons of olive oil in the pan and heat on medium high heat until it shimmer.

  3. Put the scallops in the pan in a single layer and don't squish them. They need room to create a perfect sear. If you have to do it in batches, it's okay because you will be heating them again in the sauce.

  4. Cook for about 3 minutes until they get lightly crusty and then turn them. Once they are lightly crusty on the other side, check to see that they are opaque throughout. Remove them from pan.

  5. Make a sauce by cooking some minced garlic (1-1/2 T) in 3 T of melted butter.

  6. Add a 1/4 cup of white wine, 2 T of lemon juice and 1/4 cup of chopped parsley. Reduce it by half. Then put the scallops in to heat and you are done!

What's the best part of this recipe besides the scallops? Using the words lightly crusty as a description. It makes me think of so many things I love - like Mr. Fish.... and toast.

Pompano

What a great fish we have today!! Pompano from Louisiana! Please (!) call if you are interested. Whole or fillet.

Pompano are small, silvery fish with blue, green, and yellow coloring, known for their mild, sweet flavor and high-fat content, making them a prized seafood. Found along warm, sandy shores of the Atlantic and Gulf Coasts, they feed on small crustaceans and mollusks.

Wines By Mike

Join us for a free wine tasting this Saturday (and every Saturday) from 3:00 - 5:00. This weekend we are featuring wines that absolutely "punch above their weight!" (ed: I believe this is a sports reference meaning very good wine.)

Arsac 'Les Amandieres' 2023 Viognier - $26.29

Ardeche, France - Northern Rhone

Winemaker Notes:

Although there is just a touch of the classic white and yellow flowers that Viognier is famous for, the nose here actually has more mineral notes than anything. The palate is a lovely, restrained example of this northern Rhone grape too, with ample orchard fruits, along with more mineral elements. A classic. FLORAL, VIBRANT, BRIGHT, FULL, MINERAL

Pairing Suggestion

A light fish in a beurre blanc is a classic choice, but chicken piccata, or even a nice salty pork chop will do just as well! A slightly fuller white like this really invites pairing with protein.

Pedroncelli Mother Clone Dry Creek Zinfandel, 2022 - $23.49

(I love Zinfandel and this one is a GREAT value on a highly rated wine.)

Wine Spectator - 92 Rating

Winemaker Notes:

Pedroncelli Mother Clone is a classic Dry Creek Zinfandel with spicy aromas of cinnamon and white pepper along with red berries and a touch of vanilla. Black cherry flavors blend with vanilla, licorice, and warm baking spices. The berry-spice combination, so typical of Dry Creek Zin, includes a touch of pepper on the rounded finish which is a hallmark of Pedroncelli's style.

Blend: 91% Zinfandel, 9% Petite Sirah

Terre Rouge le Cotes de l'Ouest Syrah, 2018 - $27.79

This great California winery in the Sierra Foothills produces Syrahs that are always highly rated, made in a classic Rhone style and are a great value for the quality.

Wine Enthusiast - 93 Rating

This dense, concentrated and firmly tannic wine offers pure fruit flavors without a lot of obvious oak spices, so it delivers blackberries, blueberries and dark chocolate from first whiff to lingering finish. While delicious, it's also rather tight in texture and will certainly improve through 2028. — Jim Gordon, Wine Enthusiast

And Finally

Labor Day means the end of summer. Back in the day, summer vacation ended on the Tuesday after Labor Day. We'd get all dressed up in the long sleeved, corduroy outfits our mom had spent all summer paying off at the K-Mart layaway and head out to school in 90-degree weather.

This year the summer really does feel over and done with. The temps this week have been amazing so I thought I would spend my two days off (!) outside. The first day I climbed halfway up Stone Mountain with my granddaughter, Ellie. We explored every pile of sand that had accumulated between the rocks along the way.

The next day I still had the urge to be outside and to conquer Stone Mountain in its entirety. Hence, a furious scramble up the hill with my little dog. We reached the top in record time where she promptly turned around and cried until we dashed back down again. Whew. A good night's sleep was had by all that evening.

Two adventures in the same location: one requiring patience and one physical stamina. I call it serious character development.

I hope you get outside this holiday weekend. You deserve it.

Blessings,

Kathleen
