Of course, swordfish is THE grill fish. It's texture is perfect for grilling when conditions might cause other more delicate fish to fall apart.
This weekend our swordfish is coming from Ecuador. Why Ecuador? It has to do with the Humboldt Current, a cold ocean current that moves up the South Ameican coast bringing deep nutrient-filled water that grows tiny plankton. Plankton attracts small fish which in turn attrac large hunters like swordfish. All around the Galapagos Islands, big fish live in the different ocean currents and abundant food.
Barramundi
This is the fish you need to cook this weekend. Barramundi is the most popular fish of Australians and for good reason - it is healthy and delicious! If you have never tried it, this weekend is your opportunity to enjoy a mild, buttery new fish.
Mahi is one of the best fish on the grill because it doesn't fall apart! It's our favorite fish for tacos and its mild sweet flavor holds up to all kinds of sauces. HOWEVER, here's the best way to eat mahi:

And Finally,
Waymo - I see them everywhere and it's got me thinking. I used to be opposed to such ridiculous futuristic toys, but I have had second thoughts for this reason. Picturing in my head all the cars on the road being self-driving and everyone is peacefully reading books and drinking coffee while their car maneuvers along the busy highway. It is exceptionally peaceful because horns are not honking (do they even have horns?) and there are no accident related traffic jams because Waymo don't wreck (very often). We can all smile and wave at each other because we don't have to drive and we can text and watch videos on our phones all we want.
As I was thinking this over today while I was driving, I scooted up to let someone drive around me and he happily tooted his horn in thanks. Would Waymo do that?
Hope your Labor Day is a great one. After this weekend, go ahead and get out your coats and mittens because you are going to need them. High temps are expected to drop below 90 next week.
Blessings, Kathleen
